My dinner was suppose to be Crock pot Chicken Enchiladas, but instead I made this easy Chicken Enchilada Casserole! This is what happens when you realize that a couple hours before dinner with a busy night ahead, you remember that you forgot to put your Chicken in the crockpot! What?! Umm ya. Since Budget Friendly Meals are my jam, last night I got this brilliant idea! This also makes a wonderful chicken enchilada casserole freezer meal!
This super easy chicken enchilada casserole recipe only has 5 ingredients! YAY! The best part is that it has a crunchy tortilla chips topping! YUM! AAAnd it was ready in an hour!
Chicken Enchilada Casserole
Ingredients:
Cold Chicken Breasts (Fresh or Frozen)
Large can Enchilada Sauce (Red or Green)
3 Cups Cooked Rice (white or wheat)
Tortilla Chips
2 Cups Shredded Cheese (any kind)
Directions:
Spray 9×13 pan with cooking spray. Place as many Chicken Breast in the pan that your family will eat. Then pour can of Enchilada Sauce over the top.
Cover with foil and cook for 1-2 hours at 400 degrees. This is so that the chicken gets really tender and you can shred.
Remove and shred Chicken
Now top with the 3 cups of cooked rice…spread evenly over the chicken and sauce.
Then top with Tortilla Chips and Cheese

Add the cheese and save the chips for when you are ready to cook!
For best results, put the casserole into a freezer safe container!

Now pop into the oven just until Cheese melts!
