Apple Cinnamon Puff Pancake
Happy Weekend Everyone….
I wanted to share this deeelish Apple Cinnamon Puff Pancake recipe with you because it is so tasty, easy and healthy!

2 Tbls Butter
-
2/3 C all purpose flour
-
1/4 tsp. salt
-
6 eggs light beaten
-
1 C milk – you can use skim if you like
-
2 Tbls sugar
-
1-2 sweet apples..like Fuji or Braeburn..you can use Pink Lady and those fancy ones too.
-
1 tsp vanilla-optional
-
Brown Sugar-optional
Preheat oven to 375 degrees
Lightly spray pan with cooking spray..Put 2 Tablespoons of butter into a dish and put in oven while it is preheating.
Peel and cut up apples
Sauté’ in a pan with butter until tender..about 5 minutes
I like to sprinkle Cinnamon on the apples at this point so that the flavor cooks in a little
While Apples are sautéing mix up eggs, milk, flour, salt, sugar and vanilla if you want to, into a mixing bowl. Batter is suppose to be a little lumpy.
Take dish out of oven and pour batter into it.
Then top with Sautéed Apples
Bake for about 20 minutes…put knife into center and pull out clean..to check for doneness..knife should be clean.
You can top with Brown Sugar and more Cinnamon if you wish!
And there you have it! This is deelish and EASY! Enjoy!
I love Puff Pancakes because you can fix them fast and then pop them in the oven while you continue going about what you need to do.

I made this for breakfast this morning. I liked it. It was very different. Looks beautiful coming out of oven except mine did not rise in the middle. I think it was a combination of trying to use convention heat and too many apple slices. It was delicious though. No complaints from family. 🙂 Bless your day!

I love puff pancakes, but I’ve heard they don’t puff up and bake properly in a convection oven which we recently bought so I haven’t had any recently. I guess I should just experiment and go for it.

Hi KewKew..so sorry I didn’t catch your comment from the other day..this recipe serves 4-5 fairly small portions..I usually double for my family.
