If your family loves Mexican food then this is a no-brainer meal that we love to fix…frozen burrito enchiladas…even the kids can do this!! It makes frozen burritos better! Make this meal for a super easy Team Meal when it’s your turn!

Frozen Burrito Casserole Recipe

The Only Tool you’ll need

This recipe is SO EASY that you only need one simple tool.

A Frozen Burrito Casserole is the EXACT same thing as Frozen Burrito Enchiladas. Made with the exact same ingredients of choice but simply called a different name.

Ingredients:

  • Homemade or Grocery store-bought frozen burritos (Meat Burritos or Cheese Burritos)
  • 1 or 2 ~ 28 oz large cans of Enchilada Sauce. Green or Red Enchilada Sauce
  • Cheddar Cheese ~ or any kind you love!
  • Optional ~ Sour Cream
  • Optional ~ Homemade Salsa or Store-bought

What do you put on a Frozen Burrito Enchiladas?

You can put LOTS of different toppings on frozen burritos to make them even better! The sky is the limit.

The best way to make sure your family will gobble this up is to poll them for their own favorite toppings and either serve on the side or top and cook the extra toppings. 

Try some of these favorite add-on toppings:

Toppings are the best and easiest way to jazz up this easy burrito casserole. Dress it up or dress it down…your choice.

  • Avocados
  • Salsa
  • Sour Cream
  • Guacamole
  • Pico de Gallo
  • Black Bean and Corn Salsa Salad
  • Shredded Cheese…of course! Try Monterey Jack, Colby Jack, Sharp Cheddar, Mozzarella
  • Saracha hot sauce
  • Olives
  • Cilantro
  • Black Beans
  • Refried Beans
  • Top with Extra Taco taco-seasoned ground beef or chicken
  • Green Chilies ~ for a little extra pizazz!

Directions:

As you can see with the following recipe, prep time takes only minutes and I created this super quick easy frozen burrito enchilada bake recipe in literally 15 minutes! Believe it or not, it tastes just as good as homemade!

Use your fave frozen burritos (homemade or grocery store-bought). Use the proper size baking dish for how any burritos you are baking. I used a small 8×10-inch casserole dish because it was just 3 of us tonight. If you have more burritos definitely use a 9 x 13 casserole dish.

Pour a large can of Enchilada Sauce on top of the burritos…any kind you like…we like Green Chile Enchilada Sauce, but you can use Red Enchilada Sauce if you like.

Top with your favorite cheese. We used Cheddar Cheese and Monterey Jack Cheese. You can use ANY kind of cheese you like!

Quick Enchiladas

Do you cover Frozen Burrito Enchiladas when baking them?

Yes, Cover with aluminum foil. You need to cover the enchiladas to keep the heat in. This way they will cook faster and not get all dried out. Also, you don’t want your cheese to burn. If you like your cheese a little crispy on top you can cook for an additional 5 minutes without the foil. 

Cook your burrito bake for 15 minutes in a 425 – 450 degree preheated oven.  (I like quick)

If you like you can top with sour cream and homemade or jar salsa.  I topped it with my Homemade Chunky Mexican Peach Mango and Pineapple Salsa but you can totally use a jar of salsa..really it’s legal!

Sooo if you have company coming for a luncheon… or it’s a super busy weeknight…this is a really nice, quick and delicious meal!

You can also make this easy frozen enchilada dinner for a freezer meal! Make this easy recipe ahead on a weekend and put back into the freezer until you are ready.

Always store leftovers in an airtight container.

  • 1 dollop Optional ~ Sour Cream
  • 2 Tblsp. Optional ~ Homemade Salsa or Store bought

Instructions
 

  • Use your fave frozen burritos (homemade or store bought). Put into a baking dish.
    1 pkg. Homemade or store bought Frozen Burritos
  • Pour a large can of Enchilada Sauce on top..any kind you like..we like Green Chile, but you can use Red Sauce if you like.
    1 16 oz. Enchilada Sauce of your choosing ~ Large Can
  • Top with your favorite cheese. We use Cheddar and Monterey Jack. You can use ANTHING!
    1 cup Cheese ~ Any kind
  • Cover with foil.
  • Cook for 15 minutes in a 425 – 450 degree oven
  • Top with your favorite ingredients
    1 dollop Optional ~ Sour Cream, 2 Tblsp. Optional ~ Homemade Salsa or Store bought

Notes

Top with Semi Homemade Chunky Mexican Peach Mango and Pineapple Salsa or use a jar of storebought salsa..it’s really ok!

    This was easy. They were good!
    I found 15″ to bake is NOT enough. I found the inside of the burrito still cold. I baked an additional 10″ before eating.

  2. Is there one particular brand of frozen burritos that stands out above the others? This isn’t an item I typically buy.

    1. Hi Sheila! When I first started making this easy Frozen Burrito Enchiladas hack, I used Bean, Beef and Cheese frozen burritos because my kids were very picky eaters. Now I like to use Amy’s brand or similar. They are however more expensive. Any kind you pick will be yummy!
