With Fall coming upon us, the busyness of school and all the extra curricular activities that go along with that…and I wanted to share some of my quickest recipes and shortcuts for cooking.
The end of Summer is a great time to try some new recipes to see if your family will love them or hate em! You will LOVE the way these lazy enchiladas with frozen burritos comes together FAST! Our whole family gobbles these up and it’s so easy to double, triple and more when company comes over!
All you have to do is add to your simple flexible meal plan and boom, life is sooo much easier!
This is a no brainer meal that we love to fix…frozen burrito enchiladas…even the kids can do this!! It makes frozen burrito’s better! Make this meal for a super easy Team Meal when it’s your turn!

Quick Easy Enchiladas with Frozen Burritos
How to Make Enchiladas with Frozen Burritos
Ingredients:
- Homemade of store bought Frozen Burritos
- Enchilada Sauce of your choosing ~ Large Can
- Cheese ~ Any kind
- Optional ~ Sour Cream
- Optional ~ Homemade Salsa or Store bought
Directions:
What do you put on a frozen burrito?
You can put LOTS of different toppings on frozen burritos to make them even better!
- Avocados
- Salsa
- Sour Cream
- Guacamole
- Pico de Gallo
- Black Bean and Corn Salsa Salad
- Cheese…of course!
- Saracha hot sauce
- Olives
As you can see that with the following recipe I’ve made a super quick easy Enchilada recipe! Believe it or not it tastes just as good as homemade!
Use your fave frozen burritos (homemade or store bought). Put into a baking dish.
Pour a large can of Enchilada Sauce on top..any kind you like..we like Green Chile, but you can use Red Sauce if you like.
Top with your favorite cheese. We use Cheddar and Monterey Jack. You can use ANTHING!
Do you cover enchiladas when baking them?
Yes Cover with foil. You need to cover the enchiladas to keep the heat in. This way they will cook faster and not get all dried out. Also you don’t want your cheese to burn. If you like your cheese a little crispy on top you can cook for an additional 5 minutes without the foil.
Cook for 15 minutes in a 425 – 450 degree oven. (I like quick)
If you like you can top with sour cream and homemade or jar salsa. I topped with my Homemade Chunky Mexican Peach Mango and Pineapple Salsa but you can totally use a jar salsa..really it’s legal!
Sooo if you have company coming for a luncheon… or it’s a super busy weeknight…this is a really nice and quick Enchilada dish that is easy, fresh (if you make the super easy salsa) and deelish ~ oh and semi homemade!

- 1 cup Cheese ~ Any kind
- 1 dollop Optional ~ Sour Cream
- 2 Tblsp. Optional ~ Homemade Salsa or Store bought
Instructions
