Easy Ground Beef and Vegetable Casserole Recipe

This simple recipe is an old family favorite and depending on if you have picky eaters…I do…you can switch it up to meet your families needs.
Easy Ground Beef and Vegetable Casserole Recipe
In my opinion, the star of this Yummy 5 ingredient casserole is the delicious cream sauce and the Cheesy Potato that top this easy Ground Beef Casserole dish! It’s also a very versatile recipe! The cheese is always the part our whole family loves!

Main Ingredients you’ll need for this recipe
Directions:
Preheat oven to 400 degrees. Spray your baking dish with cooking spray, I like Olive Oil Cooking Spray but you can use whatever you like.
- You will use a 9×13 Casserole dish for 2 lbs. of Lean Ground Beef.
- For 1lb. use a smaller baking dish. I used a 12×12 that I have.
Brown your Lean Ground Beef in a large skillet over medium heat. Then add your Canned Cream of Mushroom or Canned Cream of Chicken Soup. Add Milk, Worcestershire Sauce and seasonings.
Stir Ground Beef mixture and let your Cream Sauce simmer gently while you cut the potatoes.
I do not peel the potatoes but you can if you’d like. I just wash really well then slice. I use a Mandoline Slicer to cut my potatoes when making something like this. I literally takes me minutes to do it this way.
However, you can simply use a sharp knife and slice your potatoes evenly to make sure that the potatoes cook evenly.
Mix your vegetables in the your ground meat mixture and pour into your prepared baking dish. I used frozen carrots and peas this time, but remember, you can use whatever veggies you like.
Other vegetables that go well in a Hamburger Casserole
- Green Beans
- Corn
- Broccoli
- Onions
- Red and Green Bell Pepper
- Green Onions
- Tomatoes or Tomato Sauce
Then I started layering the potatoes and cheese on top of the hamburger mixture. First a layer of potatoes then cheese then potatoes then cheese to top it off. The last layer should be cheese. This makes a more Cheesy Casserole! Besides…cheese and potatoes are yummy together!
After the last layer, add your last bit of milk around the edges of your casserole. This is going to simmer while cooking in the oven and the potatoes will come out perfectly cooked!
After adding the last of the milk, cover your baking pan with foil and tightly seal the edges so that the hot air stays in when cooking.
Bake in your preheated oven for 45 min.

Variations of this recipe to try next time!
- You can use whatever kind of Canned Cream Soup you like. This Ground Beef Casserole tastes great no matter which kind you use.
- Ground Turkey is a great substitute for Ground Beef.
- Use any kind of vegetables you like! Or leave them out!
- Switch up the kinds of cheeses you use each time! A sharp Cheddar is delish!
- Add Cream Cheese…just stir it into your cream sauce as it’s cooking rather than topping the whole casserole.
- You can also add sour cream to your cream sauce while it’s simmering.
- Make a double batch and freeze a batch...just the hamburger and sauce part.
- Use brown gravy mix instead of Worcestershire Sauce OR with it!
- Substitute Beef Broth instead of using Milk!
- Use different kinds of potatoes.
- YES you can use frozen potatoes! This will cut your cooking time in half.
Handy tip: Think Ahead!
Raw potato’s take quite a while to cook and soften. So although this recipe is easy peasy…it will take a while to cook those potatoes.
