Verde Chicken Enchiladas by Kraft Recipe Makers
Today was a day that I was so thankful to have a little help in the kitchen from Kraft Recipe Makers! Well not a little help…a HUGE help..this is how my last couple of days have gone…
Unfortunately the Kraft Recipe Makers have been discontinued…a total bummer because they were deeelish! If you are looking for a similar recipe that is super easy to throw together you may enjoy my Enchilada Casserole!

My Daughter that I babysit for called me on my cell phone…I was driving so I had my 14 year old answer it and put it on speaker. “Mom, why haven’t you answered my texts or my phone call today? Aren’t you resting after yesterday? What are you doing today?” (by the way…I’m supposed to be on vacation this week! HA!)
Yesterday…was my family’s yearly gathering…
I had to laugh… “Resting? Nooo…Today is your Brother’s Birthday party at the Lake and I just left to drive your Sister to her Basketball Training…after I drop her off..I have to go back to the Lake for the Party”
Rest? What is that??!! HA!
By the time I got home it was about 6:30 at night…Everyone was hungry from sports and partying…because we had had a Pizza lunch…much earlier…So what’s a Mom to do? Although I love to cook from scratch..I’m a firm believer in having ready made meal helpers, if they are tasty and healthy…so I LOVED trying this Verde Chicken Enchilada Kraft Recipe Maker! There were lots of different Recipe Makers to choose from…but I’m a spicy girl myself…my hubs is not..so this was a test! Sort of…LOL If this passes his taste buds…then it’s a definite keeper!
Ingredients:
- 1 Box Verde Chicken Enchilada from Kraft Recipe Makers
- 4 cups cooked Chicken (shredded or chopped up)
- 12 Tortillas..we chose Corn
- 1 cup Kraft Mexican Style Finely Shredded Four Cheese
Directions:
I already had cooked Chicken in the fridge, but if you didn’t have any, you could pick up some already cooked frozen chicken from the store or better yet..buy a Rotisserie Chicken and just get Chicken off the bone!
This is what comes in the Verde Chicken Enchilada package..2 packages of Verde Sauce and 1 of the Creamy Rancho Filling Sauce..
This is all you do…Pour 1 Package of the Verde Sauce into a 9X3 baking dish..
Pour the Rancho Sauce into your cooked chicken and stir in…
I added some rice on top of the Verde Sauce before I filled my Tortillas…
Spoon Chicken Filling into your Tortillas…I added cheese too!
Now I just folded over my Tortillas because I was tired and in a hurry…but you can roll if you want..
Pour second Package of Verde Sauce over the top and add Cheese!
Cover with Foil and Bake 15-20 minutes at 350 degrees…it’s QUICK!!
Now eat!! Ok…the verdict on if it was too spicy…NOPE.. the hubs liked it! YES he liked it! He said it wasn’t too Spicy..but just right…That was a shocker because when I make Enchiladas from scratch I have to be very careful about how spicy I make it…or he will not eat it! Kraft..you’ve done it again! Our fam loved it and it was a quick family meal! Healthy too!
By the way…Kraft Recipe Makers had another surprise for me…printed INSIDE the box…there were 2 more RECIPES that you could make with this Recipe Maker kit! You ROCK Kraft…because us Moms need a lot of ideas to keep our families happy!! Yahoo!

Hi Nancy! Well that is a total bummer because this was so good. I have researched for you and sure enough, Kraft is no longer making this. I found the response from Kraft on facebook actually after alot of research. Here is the link if you would like to read. I’m so sorry for the inconvenience 🙁
In the meantime..if you are looking for simple Enchilada recipes I have two easy ones that you could make! Enchilada Casserole and Crockpot Enchiladas…the pictures have disappeared on this one so I’ve got to go fix!! Yikes!! But it’s good!
