I have been meaning to post this super easy Lazy Cake Recipe forever! This quick dessert is made with very inexpensive pantry ingredients that you’ll for sure have in stock. This is also a great recipe for the kids to help with as you can’t go wrong no matter what you do! Other names for this recipe are sometimes called the busy day cake or lazy day cake. It has changed over the many years it’s been around.
This is a basic old-fashioned recipe that my Grandma used to make. As a kid, we always loved to help her make it. She never got upset when it seemed like we would spill the ingredients into the bowl, or measure wrong. As I said…you simply can’t go wrong with this Lazy Cake Recipe.
Lazy Cake Recipe
Ingredients:
Simple ingredients that you should have on hand because you can really do so much with these!
- ⅓ cup all-purpose flour
- ⅔ cup granulated sugar
- 2 tsp baking powder
- ⅔ cup milk
- ¼ cup butter softened
- 1 egg
- 1 tsp vanilla
- Powdered sugar, optional

Preheat the oven to 350 degrees. Grease an 8 x 8 baking dish. It’s perfectly ok to use cooking spray.
Combine flour, granulated sugar, and baking powder together in a medium bowl. Mix together with a whisk.
Add wet ingredients to the flour mixture. Beat on low speed until combined. Beat on medium speed for 1 minute. If your butter is very soft you don’t need an electric mixer. However, you’ll need one if the butter is a little hard.
Pour batter into the prepared baking dish.
Bake at 350 degrees for 25 to 30 minutes. Your Lazy Cake will be a golden brown!
To test for doneness insert a toothpick or a sharp skinny knife into the middle of the cake. When the toothpick / or knife comes out clean the cake is done.
Cool on a cooling rack. Dust with powdered sugar, if desired. Serve and enjoy!
