Easy Homemade Caramel Corn Popcorn Recipe

I have given this Caramel Corn Popcorn Recipe for YEARS as gifts and everyone who gets it LOVES it!

You will need a candy thermometer for this recipe…but they are not expensive and well worth the little investment if you want to make other yummy candies like this Homemade Toffee Crunch!

Ingredients:

  • 3 Batches of Popped Unbuttered Popcorn ~ about 12 Cups
  • 1 Cup Butter
  • 1/3 Cup Brown Sugar
  • 2/3 Cup White Sugar
  • 2/3 Cup Karo Syrup
  • 1/4 Cup Organic Black Strap Molasses
  • 1 tsp. Vanilla
  • A Sprinkle of Kosher Rock Salt (optional for Salted Caramel Corn)

Directions:

One of the unique ingredients that I use in this recipe is Organic Black Strap Molasses..it is long known for being superior to many other Molasses on the market. Umm it’s super yummy too! 🙂 (you don’t have to though…you can use local brands from the store of course)

 Mix together butter, brown sugar, white sugar, karo syrup and Black Strap Molasses in a heavy saucepan.  Bring to a boil until it reaches the medium ball stage on a candy thermometer.

After the the mixture reaches medium ball stage, remove from heat and add Vanilla.

Pour mixture over popped popcorn in a VERY LARGE BOWL and mix until popcorn is covered.

Pour popcorn onto cookie sheets and put into a 250 degree oven.  Bake for about 1/2 hour to 3/4 of an hour, checking to see the crispness of the batch.  You can stir if you like in the middle of cooking time, but it’s not necessary.

Remove from oven and let cool down completely.  You should have nice crunchy Caramel Corn Popcorn

You can also use this recipe for a Molasses Popcorn Balls Recipe! Simply form popcorn into a ball immediately after you remove from the oven. BE SURE AND WHERE GLOVES! Popcorn will be HOT!

You can also add peanuts to this yummy mixture. You would add them to the popcorn just before you pour the Syrup onto the popcorn. YUM!
