Easy Strawberry Lemon Cake Mix Cookie Recipe 4 Ingredients!

These Strawberry Lemon Cake Cookies were tasty enough and pretty enough to give away…so I made more and did!
It’s so easy to make cookies from a cake mix. Cake Mix cookies have been around for a long time. They can be made in any cake mix flavor you can find! Not only that you can be a bit creative with them, with minimal work.
I had a lemon cake mix and I wanted to jazz these up a bit so I got out my all fruit strawberry jam…and this is what I did.
Easy Strawberry Lemon Cake Mix Cookies
There are 2 ways you can make these easy 4 ingredient cookies. Both methods are below and super yummy!
Ingredients:
- Lemon Cake mix
- 1/2 cup all fruit Strawberry Jam
- 2 eggs
- 1/8 cup Olive Oil, Canola Oil or Coconut (I prefer not to use vegetable but if that’s what you use…it’s perfectly Ok!)
Directions:
First Cookie Method:
Mix together cake mix, eggs, oil and jam...all 4 ingredients.
Batter should be the consistency of cookie batter.
HINT: if it’s a little thinner than cookie batter you can add a tablespoon of flour a LITTLE at a time until you have the consistency of Cookie Batter.
Depending on the thickness of batter…if it’s a bit thinner, drop a teaspoonful onto a cookie sheet with a spoon like a drop cookie.
If the batter is a nice cookie batter texture, simply roll into balls and place on your cookie sheet. These I dropped and then I sprinkled powdered sugar on top.
Cookie Method 2:
Mix all the ingredients as directed above for the Strawberry Lemon Cake Mix Cookie. Make a little well/dent in the middle with a spoon and added more All Fruit Jam to make a thumbprint cookie.
HELPFUL HINT: Spray the back of a small spoon with cooking spray or dab it in flour. This will keep it from sticking to dough.
Bake all cookies at 350 degrees for 8 ~ 10 min.
