Coconut Lemon Meringue Thumbprint Cookie Recipe
A delicious and unique thumbprint cookie that I created years ago! It’s always been a wonderful hit, especially around the holidays! This Coconut Lemon Thumbprint Meringue Cookie Recipe will have your guests asking for the recipe! Made with simple ingredients as always, it’s an impressive cookie dessert!
I’m having Thanksgiving at my house and Christmas is undecided as of yet…but one thing that I know for sure is that I’ll be cooking up a storm whether the holidays are at home or away. My daughter is the master baker in our family…but I like to think that she got her love for baking from me.
I really wanted to create something for you that would FUN and EASY for you and your kids or grandkids to do together. This is an old fashioned recipe adapted to add a fun little twist…and oh so YUMMY too. Made with very SIMPLE ingredients…The family votes that this one is definitely a keeper!!

Coconut Lemon Meringue Thumbprint Cookies
This cookie is very versatile, you can leave off the meringue if you want or leave off the coconut if you want! No matter how you choose to make these cookies they will turn out delicious because they are so easy to make but are a beautiful presentation and taste deelish!!
Ingredients:
For Cookie
- 1 Cup Softened Butter
- 1 Cup Sugar
- 1 Tsp. Vanilla
- 1 Egg
- 2 Cups Sifted Flour
- 1/4 Tsp. Salt
For Coconut Coating
- 1 Cup Coconut
- 1 Egg Beaten
Filling
- Canned Lemon Filling.. any Brand
For Meringue
- 3 Eggs Whites
- 1/8 tsp Cream of Tarter (If you don’t have this you can do without but it will take a little longer to form peaks)
- 1 Tblsp. Sugar
Directions:
Cream together softened Butter and Sugar. (that means mix together with a mixer, thoroughly)

Then add egg and vanilla and mix thoroughly.

Add Sifted Flour and Salt and mix it in with butter mixture. Use a spoon or even you hands for this part. If you don’t have sifter, that is ok! Just add your flour and salt separately.

Beat Egg for Coconut Coating in a bowl then put 1 Cup Coconut in another bowl

Make 1 inch Balls with Dough. (this is a great thing for the kids to do) Dip the cookie balls into egg and then roll in Coconut.. you could have an assembly line!

Now put an indent into the center of Cookie. If your doing this with the kids have them stick there little thumb into the middle..it’s a perfect size.

Then Fill with Lemon Filling

Timing is important in this next step…
Bake Cookies in 350 degree oven for 12 minutes.
While these are cooking make the Meringue
Beat together 3 Egg Whites along with the Cream of Tarter and Sugar
Beat until a Stiff Peak Forms

Now remove cookies from the oven and put a small Dollop of Meringue on each cookie (don’t get into perfection here) ..then put back in oven for 8 min. Watch cookies carefully to make sure Meringue doesn’t burn. That’s it!
These are sooo Yummy!
