How to Microwave Eggs

Did you know that you can microwave eggs?

Not long ago one of my grown daughters was telling me how a friend of hers always microwaves her scrambled eggs in morning.  She just makes  them up..sticks them in the microwave and goes off to finish getting ready for work.   Then comes back to scrambled eggs cooked and waiting for her in the microwave!   What?!   I had never heard of such a thing.  I must be from the dark ages because I had only ever scrambled my eggs in a frying pan!  I LOVE to cook so I’ll try just about anything..especially if it will make my life easier..and speed things up a little.

So..I had such a busy weekend.. Basketball Tournaments with my girls.  That meant 8 games in 2 days..by the way their teams got first and second place!  Yay!!   This morning I was sooo tired,  but needed to fix some sort of breakfast for my kids and grandson.  Something that seemed appealing to them.    I’m sort of a breakfast fanatic,  since my kids are so athletic I have a rule.  If they don’t take care of their bodies with proper nutrition..NO sports!

Scrambled eggs in the microwave are so easy and I can cook them up individually in cups so that when each kid gets up the scrambled egg mixture is already in each cup..all I have to do is pop it in the microwave.

Also,  it makes the kids feel like they got something special and individual.  Even big kids like this

What you need:

  • microwavable cup about 12 oz size or larger
  • 2 eggs
  • 2 Tbls milk or so
  • Cheddar cheese – optional
  • optional – salt and pepper to taste

This is for a single serving.  Coat cup with non stick cooking spray.  Beat together eggs and milk and salt/pepper.

Microwave on high for about 1 and half to 2 minutes.  Depends on your microwave wattage.

If adding cheese..top and microwave for  30 seconds

I usually mix up 5 or six eggs and divide into cups then they are ready to pop in at various times since my kids all leave at different times.

Another Egg tip:  If you think of it ahead of time you can also scramble eggs up at the beginning of the week and just have a big bowl in the frig.  Eggs keep very well and really taste no different if microwaved to warm up.

Add a piece of Whole Grain toast and fruit or smoothie..there you go

  9. Here’s a great way to make scrambled eggs in the microwave: add some (plain, white) cream cheese to the eggs, scramble and cook. Oh my goodness, they turn out SO creamy and delicious!!

  10. Sound delicious! I use to cook eggs all the time in the microwave for my children when they were starting to eat foods. It was quick and easy. One lesson to be learned when cooking eggs in the microwave. Never try to cook a hard boiled egg in there. lol My daughter did this once and the microwave door swung open and the egg flew out! She thought because she had water in the boil that it would work. Well she did learn here lesson.
