Fruit Filled Puff Pancake Recipe

If there is one thing I’m a bit of a stickler about, it’s breakfast.  No matter what the events of the day are going to be, I can always find 5 minutes to whip up a quick breakfast recipe fast. This is Fruit Filled Puff Pancake Recipe is a family fave and truly takes minutes to make… it’s sooo easy to make!

Fruit Filled Puff Pancake Recipe

Kitchen gadgets, pans and doodads you need for this recipe:

  • 9×13 pan ~ I can’t tell you how many of these I have for freezing and cooking so many things. I use them daily. I also have the carrying case with heating pad to keep foods hot when bringing a dish to a potluck or neighbor or something.
  • Whisks ~ I’m ALL about my whisks! LOL also used daily for any mixing I need by hand.  I love the silicone because they are sooo easy to clean and can be used with heat.
  • Mixing Bowls ~ I am a BIG fan of these rubber bottom bowls.  They keep the bowl from slipping around and have handles for pouring! LOVE!

Ingredients:

  • 2 Tbls Butter
  • 2/3 C all purpose flour
  • 1/4 tsp. salt
  • 6 eggs light beaten
  • 1 C milk
  • 2 Tbls sugar
  • 1 tsp. vanilla-optional
  • Cinnamon and sugar
  • 2 C Fresh or Frozen Fruit  (I like to use blueberries,…because I have sooo many Smile or Strawberries and Bananas or whatever!)

Preheat oven to 400 degrees

Place butter in a 9×13 pan.  Place pan in oven so the butter melts.  Meanwhile,  in a small bowl  combine flour,  2  Tbls. sugar and salt.

In a large bowl add eggs and milk and (vanilla if using) ;  whisk until smooth.

Remove hot 9×13 pan from oven and pour ingredients in pan.  Bake at 400 degrees for 15 – 20 minutes or until edges are puffed and golden brown.

Meanwhile, chop up fruit you will be using..

In a small bowl.  Combine cinnamon and  sugar.

Remove Puff Pancake from oven…It’s beautiful!  Just to let you know..it won’t stay that way..the puffiness starts to deflate..but it’s still fun and deeelish!

Spoon fruit mixture onto pancake;  sprinkle with cinnamon and sugar.

Cut and serve!

A delicious easy Breakfast Fruit Filled Puff Pancake. A great healthy pancake with fruit and cinnamon and sugar topping. Packed with lots of eggs! Pretty enough to serve to company but easy enough for a busy week morning.
