Do you all love fish? Do you hate fish? Well I’ve got a super easy Fish Stew recipe that will knock your socks off and if you are not so fond of fish, you soon will be! This is the Best clean eating, super easy one pot Fish soup / stew recipe that’s so healthy and made with simple ingredients like Potatoes. A delicious dinner or lunch!
Don’t let the ingredient list throw you because it’s the basics and this is a throw it together stew that is healthy and YUM!

Super Easy Fish Stew with Potatoes Recipe
Ingredients:
- 3 Tbsp Olive oil
- 1 medium yellow onion, chopped
- 1/2 red pepper, diced
- 1 large tomato, diced
- 2 garlic cloves, minced
- 2 carrots, peeled and sliced
- 2 medium potatoes, diced
- 1 1/2 lbs of Cod ~ fresh or frozen
- 1/2 Lime juice
- 1 large green onion, chopped
- 2 cups of Chicken broth
- 1/2 can of coconut milk
- salt/pepper
Directions:
Cut the fish into 1 inch pieces. Season with salt and pepper.
Heat oil and sauté the onion, add the pepper, potatoes and carrots. Cook until the pepper and onions are soft. Add the garlic and mix with the vegetables. Then add the tomatoes and stir again. Next pour the chicken broth, lower heat and allow to simmer until the potatoes are cooked. Check in about 10 minutes.
Before adding the fish, turn the heat back up to a boil. Add the fish into the pan and quickly allow it to boil again. Pour the coconut milk and stir. Don’t over cook, or else the fish will break apart. Remove from heat and let it sit covered for 5 minutes.
Before serving, squeeze the lime juice and gently stir the stew. You can serve it over white rice or with some sourdough bread on the side.
Add a pinch of green onions or cilantro to taste! YUM!
This recipe serves 2 adults really well! So if cooking for a family, be sure and double or triple.
