Roasted Broccoli

Whoever doesn’t like Broccoli, raise your hand.  Ever since my Mom died of cancer 18 years ago, I have been pretty intentional about eating foods that are known to have cancer fighting properties.  However I am in the raising my hand camp when it comes to really liking Broccoli.

Does that mean that I don’t eat it?  Absolutely not!

I have learned over the years to eat my Veggies..which is something that has taken a looong time to do.  I know, I’m a baby!  One of the ways that I’ve learned to “tolerate” Broccoli is by roasting it with yummy toppings.

Then drizzle a little Olive Oil over the top of the Broccoli

Then put as much fresh minced Garlic all over the Broccoli as you like.  It’s perfectly alright to use Minced Garlic from a jar.  Whatever you prefer Smile

Then sprinkle with any kind of cheese you please!   I used Feta this time.

Then fold foil up into a packet (if using foil)  Roll top and then ends.

Then cook at a very high heat (425 degrees) for about 15 minutes. 

Then eat!! YUM!  Almost!  Just kidding…it really is yummy.  I’ve acquired a taste for it..if it’s jazzed up.

Ingredients
  

  • Fresh Broccoli as much as you want
  • •Olive Oil
  • •Fresh Minced Garlic or from a jar
  • •Cheese (any kind Feta, Parmesan, Cheddar, Asiago)
  • •Foil or Vegetable Baker/Roaster

Instructions
 

  • Cut up as much Broccoli as you want and put on large piece of foil or put in roasting pan. I used foil because I roasted my Broccoli on the grill.
  • Then drizzle a little Olive Oil over the top of the Broccoli
  • Then put as much fresh minced Garlic all over the Broccoli as you like. It’s perfectly alright to use Minced Garlic from a jar. Whatever you prefer
  • Then sprinkle with any kind of cheese you please! I used Feta this time.

  1. I like broccoli, and this looks super yummy. I have a tip the has worked for me. I use a peeler and peel off the hard outer coating on the trunk of the plant. Once that really fibrous portion is removed it leaves a very tender portion that is extra yummy. Plus I disliked all the waste when I would cut off the entire trunk. Hope it helps 🙂 but yeah, add a little cheese to anything and life is a bit better 🙂
