Another Super Easy Sunday Morning fave is Baked Oatmeal – this recipe can easily be doubled..just adjust cooking time a little longer and use a 9×13 pan 🙂
- 1/3 cup butter
- 2 large eggs
- 3/4 cup brown sugar
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. vanilla
- 1 tsp. nutmeg or 1 tsp. cinnamon (I like both!)
- 1/4 tsp. salt
- 1 cup milk
- 2 Tbs. milk
- 3 cups oatmeal (regular or quick)
Melt butter, Grease a 1 1/2 quart baking dish , beat eggs together well, add brown sugar, baking powder, vanilla, nutmeg or cinnamon, and salt to egg mixture. Mix well, no lumps. Whisk in butter and milk, then add oats.
Stir well and pour into baking dish. Cover and refrigerate overnight.
Bake, uncovered, at 350 for 35 to 45 min. or until set in the middle. Serve Hot with warm milk poured over it..if you want 🙂
You can also add apples, peaches, raisins, nuts and of course blueberries!
