As a Mom, trying to eat super healthy can get put on the back burner when cooking snack foods, meals and desserts for the rest of the fam. Yes I eat all the yummy Hot Pockets, Calzones and other yummy bread stuff I create but it is also just as important that I make time to prepare foods for me…whether I like it or not.
Over the years I’ve devised lots of super quick ways to get in a healthy snack with a minimum of effort… Like this Guacamole Stuffed Cucumber snack. It’s deelish and packed with protein and fiber. One draw back of this healthy snack…it makes you burrrrp.
Although I have gotten out of the habit of making some of these things…I’m thankful that I can start over anytime. So I’m hoping to post a fun healthy way to get a good snack in for you to try once a week.
- Guacamole (you can use homemade or store bought)
- Feta or Asiago Cheese (optional)
Peel Cucumber if you like. Cut Cucumber lengthwise.
Then with a Melon Baller or a little spoon, scoop out seeds.
Then fill the middle with Guacamole
Sprinkle with a tiny bit of cheese (optional)
This easily keeps me full for a couple of hours or more…I also try to add a little fruit and water to this healthy snack
