Veggie Stuffed Rice Patties Recipe

Veggie Stuffed Rice Patties Recipe

So I’m going to show you what I chose for my kitchen gadget drawer…well one of them..I’m embarrassed to say I have many..but they are filled to the brim with GoodCook gear because I love it!  Then I’ll give you the Yummy Recipe and show you how I used my kitchen gadgets!DSC_5476

 

Veggie Stuffed Rice Patties Recipe

Ingredients:

  • 2 Cups Cooked Rice (white or Brown) I use a mixture because white is stickier
  • 3 egg whites gently beaten
  • 1 Cup grated Parmesan Cheese
  • 1/2 tsp. Garlic Salt
  • 2 Tbsp. Teriyaki Sauce
  • 1 Cup Panko or Seasoned Bread Crumbs
  • 1/2 Cup Veggies of your Choice
  • Coconut Oil or Virgin Olive Oil

Directions:

Cook up your rice first.  Make sure that it is cooled down before you make the rest of the recipe..your eggs will cook when you add them to rice if not.

I loved using this Spoon Holder with my Wooden Spoon for cooking up the rice!

After your rice has cooled – mix together:  Rice, Egg Whites, Garlic Salt and Parmesan Cheese.  Then refrigerate for about an hour.

Now this is how I made the Veggie Stuffed Rice Patties…I used the GoodCook Stuffed Burger Press, Ice Cream Scoop and Nonstick Kitchen Knives! Yep..I’ll show you! Smile

Now Chop up you Veggies..you can use any kind of Veggies you want..anything!  You only need 1/2 cup. I used Carrots, Broccoli, Onion (very little) Red Pepper and Spinach.

I am in love with the Burger Press!  I can think of a million things to stuff! LOL  Anyway…

Scoop 2-3 scoops of the rice mixture in the first half of the Burger Press.  Depending on how thick you want the Patties.

Press down with big side of press

Then use the small side to make indentation.

Fill with Veggies and then Add Tsp. of Teriyaki Sauce.  By the way I looove my Double-Sided Flip Measuring Spoon from GoodCook also because it is a 4 in 1!

Now scoop 2-3 more scoops of rice on top and press down again.  Use the Spatula to gently loosen the Stuffed Pattie. 

Have ready 1 Cup of the Panko/Seasoned Bread Crumbs in a shallow dish.  I love to use Panko..but alas I was out, so I used Bread Crumbs.

Give your Pattie a light coat of oil then press into bread crumbs. I used the Natural Hair Pastry Brush and find it so much easier to apply oils and things like that.

Lift carefully with a large Turner and put the Veggie Stuffed Rice Patties on a baking sheet and bake at 400 degrees for about 15-20 min.  You can also fry in oil if you like..but baking is a healthier version.

I carefully lifted off of baking pan with these super cool Tongs!  These were really gentle and sturdy.  I will be using them for a million more things!

The other tools in my drawer?  Collapsible Funnel..I totally NEED this!  I buy in bulk and am forever pouring big quantities of this and that into smaller containers.  I love that it fits nicely into my utensil drawer since it collapses! 

I also got a Bread and Bagel Knife..Umm self explanatory since I make sooo much bread! Smile
