Easy Chicken Taco Casserole Recipe
I LOVE to create easy Budget Friendly Meals! Since my family LOVES Mexican type dishes I made up this Easy Chicken Taco Casserole Recipe. I didn’t really know what to call this because sometimes I just make things up and then I don’t really have an official name. Excuse the terrible pics, I haven’t ever replaced them from the first time I invented this!! Embarrassing!
This a recipe that your whole family will LOVE! I have been making this for so many years and every time I make it I switch it up! Use all your favorite taco fixings and add them before you cook or to add as toppings after the Chicken Taco Casserole is baked. See the Suggested Serving Tips at the end of this post for LOTS of different ways you can make this!

Easy Chicken Taco Casserole Recipe
This recipe uses super simple ingredients and you can add or subtract some of the ingredients to meet your families needs. It’s one of those easy recipes you’ll want to make over and over.
Ingredients:
- 2-3 cups Cooked Chopped Chicken Breasts or Chopped Rotisserie Chicken (Add more chicken if your family is larger)
- 2 cans Cream of Chicken soup (we like Campbells Cream of Chicken Soup Low Fat)
- 1/2 ~ 1 cup Milk (makes the soup a little more saucy)
- 1-1 1/2 cup of your fave Salsa (just depends on how spicy you want it)
- 3-4 cups Shredded Cheddar Cheese (use more or less to taste)
- Tortillas (Corn or Flour)
- Tortilla Chips ~ You can use plain or Doritos and flavor…YUM
- Green or Red Peppers, Onions, Tomatoes, Green Onions, Lettuce (I serve all of these on the SIDE…picky eaters)
Optional Ingredients
Directions:
In a semi large bowl mix together Chicken, Cream of Chicken Soup, Salsa and Milk for your chicken mixture.

Layer the Chicken Taco Casserole
Spread 1/2 of mixture in the bottom of a 9X13 baking dish.
Add 1/2 Shredded Cheese
Tortillas as many you need to cover (I had 13 inch Tortilla’s in the picture so I only used two)
Then spread the rest of the Sauce over the Tortillas

Top with the rest of the Shredded Cheese.
Like making a layered Lasagna..
Crunch up as much Tortilla Chips as you like and add a little more Cheese on top. When you are done filling your casserole dish Cover with foil.

Bake in the oven for about 30 – 35 min at 375 degrees
Remove foil the last 5 minutes to get a yummy Crunchy Cheesy topping.

Suggested Serving Tips
- Pressed for time? Buy a cooked Whole Chicken from the store and debone! Or use frozen grilled Chicken!
- Use Corn or Flour Tortillas…Flour tortillas are a little more mushy when cooked but the kids love this. I prefer Corn.
- Use different flavored Tortilla Chips for topping to add some new flavors and switch it up!
- Add different kinds of Salsa also..like a Sweet Pineapple/Mango..Yum!!
- Use different Cheeses, Monterey is yummy!
- Add Refried Beans if you want to this dish! (Or serve on the side)
- You can easily cut this recipe in half or double.
- If you do not want to use Salsa, you can use a packet of Taco Seasoning.

Yum! That sounds really good Ginny..my kids would eat the corn but not the beans 🙁 I have to serve these kind of things on the side and then everyone can take what they want and pile it on..it would definately be easier to just add stuff though! Have a blessed weekend!
