Easy Beef Stroganoff over Minute Ready to Serve Rice


With the fast pace of life these days,  I’m still a stickler about wanting to serve up a healthy meal!  But I totally need something quick sometimes!   I am excited to introduce Minute Ready to Serve Rice!   We all know about Minute Rice..which by the way I always have in my cupboard for those quick meals..but now you can buy portion sized servings for individuals on the go.

Here is a quick and really easy Beef Stroganoff recipe for over rice.  It took me less than 20 minutes to make!

Ingredients:

  • Minute Ready to Serve Rice – any flavor you like!
  • 1 lb. tender cut Beef..such as Sirloin Tip
  • 1 to 2 cans Cream of Chicken Soup
  • 1/2 can of milk or 1 whole can milk if using 2 Cream of Chicken Soups
  • 1 Tbsp. Worsteshire Sauce
  • 1 Tbsp. Beef Bullion (the dry or refrigerated kind)  any brand
  • Optional – Mushrooms (sauté`d)

Cut beef into strips or bite size pieces and sauté until tender..only about 3 minutes

Pour in your Can/Cans of Cream of Chicken Soup and Milk.  Stir and add Worsteshire Sauce and Beef Bullion.  Simmer for about 5-10 min.

Now maybe you would like to add some sautéed Mushrooms..YUM!  Just chop them up and melt a little butter and cook until tender..about 3-5 min.

Now just pop your Minute Ready to Serve Rice in the oven for ONE minute and boom you’ve got a beautiful,  healthy meal!

Now I wouldn’t use these single servings right at the dinner table unless it was just my hubby and I.  But I can tell you that the rice is always the first thing to go at our dinner table..leaving me to have to cook more for my hubby’s lunch the next day..(no matter how much I make!)  Yep..of course we use leftovers for lunch the next day!

So I LOVE this single serving size!  It’s portion controlled and very portable..You don’t even have to add water.  Just pop it in the Microwave oven and boom it’s ready!  Love it!  Also makes it really easy for my kids to use as a quick Carb snack before sports..they LOVE rice!!

After dinner I just portioned out what was left of the Beef Stroganoff and froze!  Now I have several meals for the Hubs lunch or for kids that get home late from sports!   Minute Ready to Serve Rice is always available because it does not need to be refrigerated!

    We are going to butcher our cow soon and I would love to try this recipe for freeze ahead meals!
