Toasted Coconut

Sometimes the most simplest of things can seem so intimidating!  Why is that?  I didn’t toast Coconut for YEARS … why?  I knew it wouldn’t be difficult…why did it take me so long to try it?  My head told me that it was just an extra something for a dish that really didn’t add enough for me to give it a whirl.  Until about 5 years ago..I tried and oh brother is it EASY.  Better than that..YUM.. what a fancy,  easy way to dress up a little side dish!

Make your little side dish:  I just cut up some strawberries, bananas and nectarines.  Added some Vanilla yogurt and topped with toasted Coconut!  Sooo easy and it makes a simple dish SPECIAL!  (forgot to take pic with coconut on fruit! LOL)

To toast the Coconut, simply put some into a skillet on low to medium heat..watch very carefully and stir frequently.  Cook until it’s the desired amount of toasted!  Takes only a few minutes once pan is heated up.  Pour onto a paper plate or napkin to cool down for a minute. 

Then JAZZ up your side dish!  That’s it! ENJOY!
