Sweet Potato with Marshmallow Casserole
YUM! There is nothing that compliments our holiday tables more than this yummy Sweet Potato with Marshmallow Casserole! Along with a delicious splash of fresh orange juice! I think making side dishes is one of my all time favorite things to cook.
This has been a family favorite for many years. This recipe is SO EASY TOO…not to mention…deelish!!
This Sweet Potato Casserole with Orange Juice can totally be made ahead of time and refrigerated until you are ready to pop in the oven. Keeps really well if made the night before. I’ve never put it in the freezer as it’s so easy to make that I don’t really need to make that far in advance.
Is Sweet Potato Casserole a Dessert or Side Dish?
Sweet Potato Casserole is both! It’s loaded with lots of brown sugar and topped with toasted marshmallows so use the way you’d like. Most people in the PNW serve this as a side dish, but in the South it can be served as a rich dessert and is called Sweet Potato Pie!
Ingredients:
- 3 Cups Cooked Sweet Potatoes (I use one large can, not sweetened)
- 2 Tbsp.. Melted Butter
- 1/4 Cup Orange Juice
- 1 Egg
- 1/2 tsp. Salt
- 1/4 – 1/3 Cup Brown Sugar (depending on how sweet you want it)
- 1 – 2 cups Marshmallows ~ any size…I like mini’s
Are yams and sweet potatoes the same thing?
Yes basically Yams and Sweet Potatoes are the same thing! Yams are a lighter more yellow inside and traditional Sweet Potatoes that you would buy in the grocery store are bright Orange inside. They both come from the Sweet Potato family. This recipe calls for canned sweet potatoes, but you can also use canned yams. Just make sure they are not sweetened.
Directions:
Combine and mash the Sweet Potatoes, Orange Juice, Butter, Salt and Egg in a large bowl. I simply use a Potato Masher…quick and easy!
Spray a baking pan with cooking spray. This makes a fairly small batch ~ with you can double, triple…etc. I used a 14 x 10 baking dish. This is a perfect size for a smaller family/crowd!
Simply pour canned sweet potato casserole with orange juice mixture into baking dish.
Spread out the Sweet Potatoes in baking dish.
Bake uncovered in a 400 degree oven for 25 minutes.
Remove the baking dish from the oven and top with Marshmallows. These can mini marshmallows or regular size.
Put your baking dish under the broiler in the oven for a few minutes until Marshmallows are browned.
WATCH CAREFULLY because they can burn quickly!
