Cheesy Chicken Broccoli Baked Potato Topping Recipe
One of the great things about having a baked potato bar for dinner, is that there are just about a million baked potato toppings ideas! Essentially you can serve a baked potato bar once every week or two at home and still have a different meal each time. Super cheap and budget friendly so it’s PERFECT for meal planning! This easy baked potato recipe only has 4 ingredients: Potato, chicken, broccoli and cheese.
If you have BIG eaters then buy BIG potatoes, otherwise you could totally use 2 or 3 smaller ones and then top them for one person. I personally like to buy organic potatoes. Yes, they are a tad bit more expensive but I feel better about eating them since they are grown in the ground.
Are Potatoes Good for You?
While I’m not a nutritionist…In my opinion…eat Potatoes in moderation and eat them LOTS of different ways. Your body and budget will thank you!

- Large Russet Potatoes (these work best for a potato bar dinner because they are very fluffy)
- Cooked Chicken
- Steamed Broccoli
- Cheese ~ your favorites
- Optional ~ green onion
Do you need to poke holes in potatoes before baking?
That’s an absolute YES! The reason is because they will explode if not and it’s a BIG mess to clean up. Now not every single potato will explode, but the ones that do…so disappointing, unless you’ve baked extras…which by the way is a GREAT idea because then you can make other Budget Friendly Meals! Just sayin!
Instructions:
Wash your potatoes first. Use a good clean and sturdy potato scrubber and hot water.
Then poke holes in your potatoes. I use a fork or sharp knife. 3 pokes…boom, boom, boom…be done with it.
3 ways to bake your potatoes and baking times ~
- How to cook baked potatoes in the oven: Bake in a preheated oven at 375 degrees for one hour. They will turn out best if you use the middle rack in the oven.
- How to cook baked potatoes in a Crockpot: The slow cooker is a great way to go if you are going to be gone all day and want to come home to cooked potatoes or if you or if it is super hot out because it doesn’t heat up your kitchen. Depending on how big your crockpot is, you can put several potatoes in at once. Wash well, poke holes, oil with a little cooking oil, then wrap with foil. Cook on high for 4 1/2 hrs. to 5 hrs. Cook on low for 7 1/2 hrs. to 8 hrs.
- How to cook baked potatoes in the Microvave: If you are in a hurry, you can always use the microwave. I cook 4-6 potatoes at a time with mine if I’m in a pinch. I have a “baked potato” button I just press and enter how many potatoes I’m cooking. They turn out perfect almost every time.
While potatoes are cooking, steam broccoli.
How to steam broccoli quickly for baked potato recipe ~
I steam my broccoli in the microwave. Simply cut up your broccoli and put into a microwavable bowl. Cover with a paper plate or towel and microwave for 2 min. for a cup of broccoli. I like to add a little Johnny’s Garlic Seasoning to my broccoli.
When Potatoes are done, simply top with Chicken, Broccoli and Cheese. YUM!!
