Recently, I made a big batch of breakfast sandwiches for a crowd, to take on vacation. I packed all 12 sandwiches into a disposable foil pan, placed parchment paper between the layers and froze the whole pan.

The night before we wanted them, I put the pan in the refrigerator to begin thawing…and BOOM… In the morning, I popped the whole pan in the oven and baked them all together.

The best thing is these aren’t only for vacations! Keep them in the freezer for busy school mornings, filling after-school snacks, sleepovers, overnight guests, road trips or a quick light meal before heading out to a game or practice.

  • English muffins: I toast and lightly butter them before assembling the sandwiches. Toasting helps give the muffins from getting too soggy after freezing and reheating.
  • Eggs: Ten eggs is the perfect amount for scrambled eggs on the 12 sandwiches.
  • Milk: A half cup of milk is mixed with the eggs before scrambling. Use whatever milk you normally keep on hand.
  • Canadian bacon: One round slice fits just right on each English muffin.
  • Cheddar cheese: Use one slice per sandwich. American, Colby Jack or pepper jack are also delish!

How to Make Freezer Breakfast Sandwiches

1. Toast the English Muffins

Split all 12 English muffins and spread butter over the cut sides. Lightly toast them in the oven.

You don’t need to make them extremely crisp. A light toasting is enough. Set the muffins aside while you prepare the eggs.

2. Scramble the Eggs

Whisk together 10 eggs, 1/2 cup milk, salt and pepper. Pour the mixture into a large greased or buttered skillet and cook over medium-low heat, gently stirring and folding until the eggs are set but still soft.

Try not to overcook the eggs. They’ll be heated again after freezing, and slightly softer eggs reheat better than dry, firmly cooked eggs. (but not runny!)

You don’t need a special egg mold, muffin-top pan or sheet-pan for this recipe. I simply make one large batch of scrambled eggs and divide it among the English muffins….easy peasy.

3. Remove Muffins From Oven

Place one slice of cheddar cheese on each muffin bottom. Divide the scrambled eggs evenly among the 12 sandwiches, then add one slice of Canadian bacon to each one. Add the English muffin tops.

The eggs don’t need to form perfect circles. Just divide them as evenly as you can and tuck in any loose pieces before adding the muffin tops.

Tiny Tip: Let the eggs cool just a bit before putting sandwiches together, so the cheese doesn’t start melting. Cooling should only take a few minutes.

4. Let the Sandwiches Cool

If the eggs are still warm let them cool all the way before packing. Packing warm eggs creates steam and condensation, which can make the English Muffins soggy and cause ice crystals to form in the freezer.

5. Pack and Freeze

Line a freezer-safe disposable foil pan with parchment paper. Place the first layer of sandwiches in the pan, add another sheet of parchment paper and place the remaining sandwiches on top.

Cover the pan tightly with aluminum foil. Label it with the name and date, then place it in the freezer.

How to Reheat a Whole Pan of Frozen Breakfast Sandwiches

This is how I reheated the batch we took on vacation:

  1. Move the covered pan from the freezer to the refrigerator the night before. The sandwiches will begin to thaw but may still be partly frozen in the morning.
  2. Preheat the oven to 375°F.
  3. Keep the pan tightly covered with foil and bake for approximately 30 minutes.
  4. Check a sandwich from the center of the pan. The middle should be hot and the cheese melted. Add more time if necessary.

Ovens and the degree of thawing can vary, so use 30 minutes as a starting point. The sandwiches in the middle of the pan may take a little longer than those around the edges. For food safety, reheated leftovers should reach 165°F in the center.

Keeping the pan covered helps hold in moisture and allows the centers to warm without making the muffin tops too hard.

How to Freeze and Reheat Individual Sandwiches

If you don’t plan to serve the entire batch at once, wrap each completely cooled sandwich tightly in parchment paper or freezer paper. Place the wrapped sandwiches in a labeled freezer bag or airtight freezer container…or even the foil pan like I used on vacation.

I take my freezer breakfast sandwiches directly from the freezer. Then remove the freezer wrapping and wrap the sandwich loosely in a paper towel and microwave until hot. Begin with about 60 seconds, then continue in 10-second intervals if needed. Microwave times vary, so check that the center is hot before eating.

To bring back a little crispness, you can place the heated sandwich in a toaster oven or air fryer for a minute after microwaving…I like crisp.

Don’t let the word “breakfast” fool you. These little sandwiches are yummy any time your family needs something quick, easy and filling.

Busy School Mornings

Move the number of sandwiches you need to the refrigerator the night before. In the morning, everyone can heat a sandwich without waiting for a full breakfast to be cooked.

After-School Snacks

These are more substantial than many packaged snacks and are especially helpful for older kids who arrive home hungry. Keep individually wrapped sandwiches in the freezer so they can heat one when needed.

Before Practice or Game Time

On evenings when there isn’t enough time for a full meal before leaving, a breakfast sandwich can work as a quick light meal. Serve it with fruit or another simple side.

Vacations, Cabins and Road Trips

Everyone gets a hot breakfast at approximately the same time, and you aren’t stuck at the stove (after a long night)!

These are also handy before an early game, family outing, fishing trip or day at the park! Heat them at home and eat before leaving, or keep them properly chilled until you’re ready to reheat them. You can also wrap in foil after heating and they’ll stay warm for about 45 minutes.

Tips for the Best Freezer Breakfast Sandwiches

  • Don’t overcook the eggs. Softly set eggs are less likely to become rubbery when reheated.
  • Cool everything before freezing. Warm ingredients create steam, condensation and soggy muffins.
  • Toast the English muffins lightly. This adds structure without making them overly dry after reheating.
  • Don’t use too much butter. A light layer adds flavor; a heavy layer can make the sandwich greasy.
  • Cover the pan tightly. Foil keeps the sandwiches from drying out while the centers heat.
  • Check a center sandwich first. The sandwiches in the middle of a full pan generally warm more slowly.
  • Label the pan or freezer bag. Include the contents, date and basic reheating instructions.
  • Add sauces after reheating. Ketchup, hot sauce or other condiments can make frozen sandwiches soggy if added before freezing.

How Long Do Freezer Breakfast Sandwiches Last?

For the best flavor and texture, I recommend using the sandwiches within about two to three months. Keep the pan tightly covered or the individual sandwiches well wrapped to prevent freezer burn.

The USDA notes that properly frozen leftovers remain safe for longer, but their quality can decline over time. Once thawed in the refrigerator, use the sandwiches within three to four days.
