Ingredients
1smallSmall Pork Loin Roast or 3 Thick Boneless Pork Ribseither works great for this recipe
116 ozBottle Barbeque Sauce
1tbspMustard – Dijon or regular yellow or both!
1/2cupSweet Onion slicesuse as much of little as you like
Optional – Cheese
Instructions
Spray your roasting pan with a non-stick cooking spray…We like Virgin Olive Oil cooking spray but use what you like. Add your Pork into your roasting pan.
Pour as much Barbeque Sauce on as you like, I used about a cup.
Now add your mustard and spread around on your Pork. Don’t add too much mustard unless you really like it! Also, if you don’t like mustard…this still makes a delicious meal!
Now top with Sweet Onions..as much as you like. Sweet Onions are not overpowering so you can add quite a bit and still not have a real oniony taste.
Cover and bake for about 2 hours at 375 degrees...this will get your meat nice and tender.
Then just pull apart with fork to make shredded pork. Serve on buns or any kind of bread you like! This is also delicious over baked potatoes!
