A delicious twist on the old meatloaf! Crunchy hash browns enveloping a moist yummy meatloaf and topped with bacon, tomatoes and green onion! It will become a new favorite!

Ingredients
1lbLEAN ground beef..like 94% lean (so that it doesn’t make the potatoes greasy)
1/2CupBBQ sauce
1/2tspOnion Powder
Salt and Pepper to taste
2Eggs
1/3CupOats
1pkg.Thawed Hash Browns
Bacon (optional)
Cheese (optional)
Instructions
For Crust – Put all of hashbrowns into a bowl with one egg (beaten) and mix thoroughly.
Then press 1/2 of mixture into the bottom of the pan and up the side only about 1/4 of inch. Sprinkle with Salt and Pepper to taste.
Then bake in preheated 400 degree oven for about 10 to 15 minutes till Golden brown.
While hashbrowns bottom crust is in the oven, mix up your meatloaf mixture. Ground Beef, BBQ sauce, Onion Powder, Oats, Egg, Salt and Pepper to taste.
After mixing Meat Mixture..place all of it on top of bottom hashbrown crust and top with bacon if using..
Then Cheese if using…
Now top with the last 1/2 of hashbrowns
Bake in oven at 375 degrees for at least 45 min to an hour. Top with any kind of Veggies you wish
