Blueberry Lemon Quick Bread Recipe

  • 2 Eggs
  • 1 1/2 C Sugar
  • 2 Tbls Oil
  • 1 C Milk
  • 1/4 C Unsweetened Applesauce this cuts down on the oil that is needed
  • 3 1/2 C Flour
  • 3 Tsp . Baking Powder
  • 1 Tsp . Salt
  • 1 Cups ~ 2 Blueberries
  • 2 Tbls Fresh Squeezed Lemon more if you want more Lemon
  • 2 Tsp . Lemon Zest


  1. Stir together the dry ingredients…Sugar, Flour, Baking Powder, Salt
  2. Stir together wet ingredients…Milk, Eggs, Oil, Applesauce, Lemon juice and Zest
  3. Mix together wet and dry ingredients…don’t over stir.
  4. Then gently fold/stir in Blueberries
  5. Now pour into a Bundt pan or use 2 loaf pans that have been sprayed lightly with cooking oil.
  6. Bake @ 350 degrees for 50 – 60 minutes. Check the doneness by golden brown and poking with a toothpick. If it comes out clean, it’s done. (some may not know this old fashioned trick)

Recipe Notes

Tip: I like to add partially frozen Blueberries because they are easy to stir without having them all break up and turn the whole batter blue. Although that’s not a bad thing!
