As Fall is coming upon us, I wanted to share some of my quickest recipes as I know the whirlwind of busyness will begin soon. The end of Summer is a great time to try some new recipes to see if your family will love them. Then all you have to do is add to your simple flexible meal plan and boom, life is sooo much easier!
This is a no brainer meal that we love to fix…even the kids can do this!!
Quick Enchiladas
Umm ya QUICK!
Ingredients:
- Homemade of store bought Frozen Burritos
- Enchilada Sauce of your choosing ~ Large Can
- Cheese ~ Any kind
- Optional ~ Sour Cream
- Optional ~ Homemade Salsa or Store bought
Directions:
Use your fave frozen burritos (homemade or store bought). Put into a baking dish.
Pour a large can of Enchilada Sauce on top..any kind you like..we like Green Chile, but you can use Red if you like.
Top with your favorite cheese. We use Cheddar and Monterey Jack. You can use ANTHING!
Cover with foil and cook for 20 minutes in a 425 degree oven. (I like quick)
If you like you can top with sour cream and homemade or jar salsa. I topped with Homemade Chunky Mexican Peach Mango and Pineapple Salsa but you can totally use a jar salsa..really it’s legal!
Sooo if you have company coming for a luncheon… or it’s a super busy weeknight…this is a really nice and quick Enchilada dish that is easy, fresh (if you make the super easy salsa) and deelish ~ oh and semi homemade!
