Cool Veggie Pizza

Hi everyone!  I want to apologize for not posting for a few days…I was summoned for jury duty and it ended up being a VERY SERIOUS thing!  Then my hubs got a concussion..then our poor little doggies knees dislocated!  Yikes what a week!

So update..my hubs is back to work and doing fine..Yay!  I was dismissed from Jury Duty due to hardships..too many kids and grandkids and childcare!  Yay!! This was a murder case and I just didn’t want to be part of it..so Yay to that!  But my poor little dogs knees are still dislocated  🙁

Anyway..I still have to cook right!? 

Cool Veggie Pizza

So here is a tried and true Appetizer/Snack – Recipe.  It’s a fantastic way to get my kids to eat Veggies they don’t usually like AND it is a super HIT at any party I go to 🙂

This Cool Veggie Pizza recipe has been around for a long time..I’ve just tweaked it to my preferences..which everyone seems to like since it’s the first thing requested when I need to bring an Appetizer..

Cool Veggie Pizza

Ingredients:

  • 1 can of Pillsbury Crescent Rolls
  • 6 oz. Philadelphia Cream Cheese
  • 2 Garlic Cloves-Fresh Pressed or Minced from a jar
  • 1 Tbsp. Uncle Dan’s Original Ranch Dressing
  • 1 tsp. Mayonnaise
  • 2 cups chopped veggies of your choice
  • 1/2 cup any cheese of your choice to sprinkle on top (optional)

Roll out the Crescent Dough onto a Cookie sheet

Press seams together

Bake in 400 degree oven for about 10 minutes..until golden Brown.

While Dough is Baking..mix together the Cream Cheese, Garlic, Uncle Dan’s and Mayo.

Also chop up your Veggies…I use my Ninja Chopper..it only takes minutes!

In this pic I have Celery, Tomatoes, Cucumber and Red Peppers..I almost always add Carrots but I was out..Broccoli is good too because it’s almost tasteless on this and oh so good for you!

After the Dough cools (about 10-15 minutes) Spread Cream Cheese mixture onto it.

Now top with Chopped Veggies…then sprinkle on Cheese (optional)  I used a Parmesan/Romano mix.

Cut up and enjoy!

    Hooray ~ glad to hear your hubby is fine and you were dismissed from jury duty (a murder trial ~ yikes!).
    So sorry to hear about your dog though ~ dislocated knees sounds very painful : (

      Thanks Deb..yes this trial was VERY SERIOUS..I was actually sworn in along with 270 other jurors! Then they began the interview process..it was scary because they did this in a courtroom full of policemen, judge, lawyers and so on..this was not the typical trial process! Whoosh .. I really just have too many responsibilities and other families rely on me..so I was off the hook…Yay..would have been terrible! Oh and this morning my dog seems to have his knees back in place..yay!
