What happens when you realize that a couple hours before dinner with a busy night ahead, you remember that you forgot to put your Chicken in the crockpot? What?! Umm ya. Since Budget Friendly Meals is my jam, last night I got this brilliant idea! My dinner was suppose to be Crock pot Chicken Enchiladas, but instead I made Chicken Enchilada Casserole?
This super simple meal only has 5 ingredients! YAY!

Thanks so much for this recipe, Shari! We eat a lot of Mexican food in our home. I love enchiladas casserole style because it is quicker than rolling individual enchiladas. I’m all about efficiency. I’m pinning this one to try soon with my favorite enchilada sauce. Thanks so much for linking up to the #shinebloghop.
