Chicken Enchilada Casserole

By Shari Lynne 23 Comments

What happens when you realize that a couple hours before dinner with a busy night ahead, you remember that you forgot to put your Chicken in the crockpot?  What?!  Umm ya.  Since Budget Friendly Meals is my jam, last night I got this brilliant idea!  My dinner was suppose to be Crock pot Chicken Enchiladas,  but instead I made Chicken Enchilada Casserole?

Chicken Enchilada Casserole

This super simple meal only has 5 ingredients!  YAY!

Chicken Enchilada Casserole

Ingredients:

  • Chicken Breasts (Fresh or Frozen)
  • Large can Enchilada Sauce (Red or Green)
  • 3 Cups Cooked Rice (white or wheat)
  • Tortilla Chips
  • 2 Cups Shredded Cheese (any kind)

Directions:

Spray 9×13 pan with cooking spray.  Place as many Chicken Breast in the pan that your family will eat.  Then pour can of Enchilada Sauce over the top.

Chicken Enchilada Casserole

Cover with foil and cook for 1-2 hours at 400 degrees.  This is so that the chicken gets really tender and you can shred.

Remove and shred Chicken

Now top with the 3 cups of cooked rice…spread evenly over the chicken and sauce.

Then top with Tortilla Chips and Cheese

Want to freeze for later? STOP HERE! Add the cheese and save the chips for when you are ready to cook! For best results, put the casserole into a freezer safe container.

Thanks so much for this recipe, Shari! We eat a lot of Mexican food in our home. I love enchiladas casserole style because it is quicker than rolling individual enchiladas. I’m all about efficiency. I’m pinning this one to try soon with my favorite enchilada sauce. Thanks so much for linking up to the #shinebloghop.
